Honey Granola

If only I knew it was so easy to make healthy, not so sweet granola at home, I would have started to make it long ago instead of getting the sugar laden commercial available ones. It's all thanks to Giulia of Mondomulia for pointing this out in her recent post. I will definitely be making this over and over again, throwing in whatever nuts or dried fruits I feel like eating at the moment......The possibilities are endless!!!!!!!!!!!!!

Ingredients (Adapted from Mondomulia)
2 cups jumbo oats
1 cup pecans, chopped roughly
20g dried coconut flakes
50g dessicated coconut
1 tbsp cinnamon powder
2 tbsp olive oil
1/2 cup honey
100g mixed dried berries(I used Urban Fruits Superberry)

Method
1) Pre-heat oven to 150 °C.
2) Chop the pecans roughly and mix them with oats, dessicated coconut and coconut flakes. Add the cinnamon powder.
3) Add the wet ingredients, olive oil and honey, to the oat mixture. Stir until evenly coated, adding more honey if required.
4) Spread the granola out on a baking tray lined with baking parchment. Bake for about 25-30 minutes, stirring half way through, until golden.
5) Remove from the oven and let cool completely, until the granola has set. Stir in the dried berries.
6) Store in airtight containers.

  1. I am so happy you tried it! I made a similar recipe last year, loved it, then got lazy and carried on spending money on luxury granola from Whole Foods! :( Which is silly, since making homemade granola is so easy and way cheaper! :)

  3. I adore homemade granola and make a big batch every couple of weeks. Perfect for breakfasts, snacking by the handful and even a rustic dessert. Yours looks lovely, yum!

  4. LOVE the small wooden scoop! I make our own muesli/granola for spring/ summer usually! It's quite a bit of effort i.e. the recipe I use! This looks a tad easier… Will try this out! Nice work!

  5. Your granola looks really simple and easy! I've been thinking about making own granola too because everyone who shares the recipes say it's so easy to do! In the beginning I felt like I have to buy a lot of ingredients (bought oats already) but all the other things I haven't... but with your recipe, I have everything but pecans. :) I can maybe switch with almonds! Thanks for the recipe. Maybe I'll give it a try this spring break!

    1. It's really easy and you can substitute the ingredients with whatever you have. Almonds would work great too!

  7. This is the best granola and so easy! I subbed 1/4 of the honey w/maple syrup. Also, I wasn't sure what dessicated coconut was, so I just used coconut chips. YUM!

    1. Dessicated coconut is dried shredded coconut. :) Glad that you liked the granola too! I've been thinking of using maple syrup too when I next make it!
