My embarrassing Pandan Chiffon Cake

The plan was to bake a light, fluffy and tall chiffon cake but alas... that was not to be.....
There's no shame in admitting that something went wrong is there?
I know my Pandan chiffon cake is so not right as it's FLAT!!!! Not flat as a pancake but it's too flat to be a chiffon cake! :( Yes, the whole world would agree with me that it should at least be double the height, if not higher so something went very wrong though I don't really know what exactly however, I'll definitely be making again it till i get it right! and of course, any pointers will be greatly appreciated. :)

  1. At least urs is brown, mine is 'naked'!

    I haven't try it for a long time now, maybe try it again soon. Something to do with the pan I think, maybe I need to bake it longer too?

    1. Thanks for the feedback! I thought it was starting to get too brown so i took it out after around 50 mins but i don't think it would have risen any higher if i left it in for longer.
      hmm, maybe my pan could have been too big? but the texture is also not too right... still not light enough. Will try it again soon! :)

  2. It's like making sponge cake, you need a light hand. Also need to tip the cake upside down in pan to 'hang' so that you let gravity stretch the cake. I can't make light chiffon cake either. Always end up defaulting the cake when folding in egg whites. Try again lor.

    1. Think i was quite heavy handed as usual. I remembered what you said and tipped it upside down but it still couldn't be salvaged! haha oh well! will be trying until it's successful!

  3. As I'm not a non-baker, I have no idea how you can improve this "already looking good" chiffon cake. But you said texture is different, so it's just not the look. Hm.... if you want to bake longer, maybe cover with foil on top so the top will no longer turn brown? I usually do that when I bake some bread...sometimes top gets brown faster than inside being cooked. Sorry it's such a basic stuff you probably know! Baking is so hard for me...and you have to bake so many times to get it right...and it differs in everyone's oven too. I love eating baked goods but I am still reluctant... LOL. Beautiful pandan leaves color, though. I love this color very much!

    1. Thanks Nami! The cake was cooked already and i think baking it longer won't make it rise higher. haha It's most probably a problem with my technique as I'm not too light handed and probably folded all the air out of the cake. :)

  4. Since I have never tasted pandan cake, for me yours looks light and fluffy and beautiful! I hope it tasted great, in spite of your disappointment in the way it looks. Maybe look for another recipe? Some recipes are more foolproof than others...

    1. Thanks Sissi! The cake should have been much lighter and fluffier. Though it didn't looks like what it should be, it still tasted pretty good, thankfully. One of my friends just passed me another recipe so i'll definitely try making this again.

  7. I'm no baker myself, so can't help there :( but don't give up, and never be ashamed of your failed attempts. we always learn from our mistakes! I've made LOTS of flopped cakes.

  9. Your cake texture is nice, I would suggest you try doubling the ingredients or use a smaller pan! Yes, the color is a very lovely green too!

  11. Hey Sylvia, have just come across your blog! I think your pandan cake looks marvellous as it is and let's face it, if it tasted good, serve it to your English friends, especially if you sandwich it with kaya, and they'll never be any wiser! I teach pandan cake in my classes fairly regularly but without knowing your recipe, I couldn't tell you what went wrong but Jeannie's suggestion is a good start!

    1. Thanks for visiting! Your comment made me giggle! haha but the cake couldn't have made it out of the house as my hubby still managed to wallop the while cake pretty quickly despite the incorrect texture!
      Heard that Bournemouth is a lovely place but I haven't paid it a visit yet.
